Golden Nugget Squash | Squash Dourado Da Pepita Squash e corte dourados da pepita da casca 1 em partes pequenas. Fervura até cozinhado. Drene a água e o mash. Adicione 2 TBSP do creme sour, 2 TBSP da manteiga e copo de 1/2 de uma cebola chopped. Puree ou misture até que liso. Simples e simplesmente delicioso.

Vegetable Surprise | Steam a 3 cup combination of brocolli,carrots,corn and red
peppers. (The vegetables may be any combination of your
choice, either fresh or frozen) Cook 1 cup of rice of any
variety. Combine the vegetables and rice together. Toss them
gently in 2 TBSP of olive oil, half the juice of a lemon and salt
and pepper to taste. Optional: sprinkle with fresh parmesan
cheese. This is great for lunch or a light dinner. It is great hot or
cold.

Shrimp Primavera | Steam 2 cups of vegetables. I use brocolli, peas, and red peppers. In a pan warm up 1 cup of cream. Add 1/4 cup of white wine,1/4 cup of chicken stock and 1/2 cup of parmesan cheese. If the sauce is too thick, add more chicken stock. Once the sauce is warm, add the 2 cups of steamed vegetables and 20 precooked shrimps. Toss the mixure and simmer on low heat for 5-10 minutes. Add salt and pepper to taste. Serve over your favourite pasta. Easy to make but tastes gourmet. |
Risotto | Place 2 tablespoons of oil in a large pot, heat over medium heat for about 1 minute. Place 1 cup of italian style rice in the pot. Cook for 2-3 minutes until the rice turns a golden brown. Pour in 1/2 cup of vegetable or chicken broth, stirring constantly. Stir in more broth as the original broth is absorbed. For 1 cup of rice, you should use about 2 cups of broth. Once the rice is soft, add 1 cup of cooked meat, 1 cup of chopped vegetables, 2 tablespoons of dried parsley and salt and pepper to taste. Let the rice cook on simmer for about 5 minutes, stirring often. Sprinkle 1/2 cup of parmesan cheese into the rice and serve. Nutritious and easy to prepare |
Enchilidas | Sautee 1/4 cup of onions with 1/4 cup of red peppers and 1/4 cup of finely chopped broccolli for 3-5 minutes. Place 2 tablespoons of the mixture in a flour tortilla. Roll the tortilla and place seam down in an oven pot. Cover the bottom of the oven pot with crushed tomatoes to keep the tortillas from sticking to the bottom. Bake in the oven for 10 minutes at 350 degrees. Mix 1 cup of crushed tomatoes with 1 cup of salsa. Pour the salsa mixture over the tortillas and cook for 15 minutes. Sprinkle with cheese and cook until melted.( Any food item may be placed in the tortillas, cook the food before rolling into the tortillas. Serve with mexican rice and some mixed greens. |
Quesidillas | Grate 1 cup of cheese. Chop up a mixture of vegetables (tomatoes,broccolli,green onion and mushrooms). Lay the quesidilla flat and sprinkle a small amount of cheese on one half of the quesidilla. Place a handful of vegetables on top of the sprinkled cheese. Place a few more pieces of cheese on top of the vegetables. Fold the quesidilla over and cook in the oven at 400 degrees, until the cheese has melted. Serve with sour cream and salsa. The quesidilla may also have cooked meat inside, and any combination of vegetables. Quesidilla may be accompained with a tossed salad, french fries, rice or beans. Great for lunch or dinner. Quesidillas may be made in advanced and stored in the fridge for a couple of days or frozen to be used at a later date. |
Potato Pancakes 1 | Peel and grate 8 medium sized potatoes. Soak the grated potatoes in water for 15 minutes. Drain well. Combine the potatoes with 1 cup of grated white onion, 2 eggs, 1/4 cup of flour, and salt and pepper to taste. Shape into flat patties and cook in a lightly greased skillet. Tastes great with sour cream and homemade applesauce. |
Potato Pancakes 2 | Mix 4 cups of cold mashed potatoes with 2 eggs, 1/4 cups of chives and salt and pepper to taste. Shape into 3 inch circles and cook on a lightly oiled skillet. Cook until both sides are a light brown. Great with sour cream and homemade applesauce. Great to reheat in the oven for Christmas Dinner. |
Beef Stroganoff | Mix 1 cup of flour with 1 teaspoon of salt and 1 teaspoon of dry mustard. Cut 1.5lbs of stewing beef into bite sizes. Dust each piece with the flour mixture. Place the meat into a crockpot with about 15 mushrooms coarsely chopped and 1 cup of chopped onions. Add 1/2 cup of red wine and 2 cups of beef stock. The liquid should be just covering the meat and vegetable mixture. Cook on low for 6-8 hours and high for 4-6 hours. Before serving, stir in 1 cup of sour cream. Serve over pasta or rice. This is my husband's favourite meal. |
Awesome Pizza | Dissolve 1 teaspoon of white sugar in 1 cup of warm water. (The water temperature is approximate, don't worry it works 99% of the time.) Sprinkle 1 tablespoon of powder yeast in the sugar water mixture. Do not stir. Let sit for 10 minutes, until it begins to foam. Combine 2 tablespoons of olive oil in the yeast mixture. In a separate bowl mix 2 1/2 cups of unbleached all purpose flour with 1 teaspoon of salt. Add 2 cups of the dry mix to the wet mix. Stir with a wooden spoon, add more flour if needed. The dough should not be sticky. Knead the dough mixture until the dough is smooth. Cut the dough in half and allow to rest for 10 minutes in a warm place. Take half of the dough mixture and roll with a rolling pin to the size of a pizza. I use my hands to roll it out by tossing it lightly in the air. (Remember the I Love Lucy Episode) Once rolled let the dough rise for 10-30 minutes. While waiting, shred the cheese, cut onions, tomatoes, pepperoni... This is the basis for scrumptious pizza. |
Pizza Sauce | Grab a can of tomato paste and let's liven it up. Mix 1/4 cup of red wine or water to the paste. Add more water until a smooth and thick sauce is reached. Mix in 1 tablespoon of olive oil, 1 clove of crushed garlic, 1 teaspoon of dry basil and 1 teaspoon of dry thyme. Spread this sauce on your pizza crust and top with wonderful toppings. This is great for nights you want take out. |
Baked Beans | Soak 3 cups of white pea beans or dry navy beans in 9 cups of water. Cover the beans and let sit overnight or for at least 8 hours. In the morning, drain the liquid. Pour 9 cups of water on the beans and bring to a boil. Turn down to simmer with the lid on for 30 minutes or until the beans are cooked. Drain and save the liquid. Place the beans in a crockpot with 1 cup of ketchup, 5 pieces of chopped bacon, 1/2 cup of diced onion, 11/2 tablespoon of molasses, 1/2 cup of brown sugar, 1/2 tablespoon of salt and 1 teaspoon of dry mustard. Leave to cook on low for 8 hours or on high for 5 hours. This is a delicious recipe and it smells great. It is great after a long Sunday walk. |
Chicken Stew | Remove the skin from 1 pound of chicken breasts or legs. Cut the meat into small cube pieces. Brown the chicken pieces with 2 tablespoons of olive oil in a pan. Dice up 1 onion, 2 carrots and 3 potatoes. Slice 2 cups of mushrooms. Place the vegetables and browned chicken in a crockpot. Stir in 2 cups of chicken broth, 1 cup of corn, 1 teaspoon of dried thyme, 1/2 teaspoon of salt and pepper. Cook on low for 4-6 hours and on high for 6-8 hours. Serve with fresh rolls or make dumplings for the top of the stew. |
Beef Stew | Cut up 2 pounds of stewing beef into 1/2 inch pieces.Dust the meat with flour and place into the crockpot. Place 1 cup of chopped carrots, 2 cups of potatoes, 1/2 cup of leeks into the pot. Add 1/2 cup of beef broth and 1 can of chopped tomatoes (16oz) into the pot. Stir all the ingredients together. Mix 1 bay leaf, 1/2 tsp of paprika, 1 tsp of salt,1 tsp of pepper and 2 tsp of rosemary into the stew mixture. Allow to simmer on low for 8-10 hours or on high for 4-6 hours in the crockpot. This is a fabulous stew to warm the chill on a cold night. |
Dumplings | Combine 1 cup of self rising flour with 1/3 cup of lard. Rub in the lard with your fingertips and add enough water to make a soft dough. Place the dumplings by the teaspoon on top of the soup and let cook for 15-20 minutes. Dumplings are great on top of soups and stews. |
